I hope you all had a Merry Christmas. As for my family and I, we truly enjoyed our Christmas.
It was a blessing to have my parents and brother and in- laws celebrating it at my home this year.
I decided I wanted to have a Christmas breakfast and it turned out wonderfully.
I made up the menu then searched on Pinterest for a way to display the menu and came across a pin that entailed printing it and placing it in a picture frame.
So, I created it on the Canva app and printed it on cardstock paper and popped it into a white frame and it came out super cute.
The buffet consisted of Belgian waffles, mini quiches, turkey bacon, hash-brown patties, sausage links plus a white chocolate raspberry cake, fruit, hot chocolate, juice and coffee.
When everything was done and set out it looked like a wonderland buffet. The family was truly impressed as was I . LOL
As soon as the family walked in the door they were greeted by my daughter with jingle bell Leis playing to the song Mele Kalikimaka by Bing Crosby.
After the delicious breakfast, we did a fun gift exchange and then called friends and family from near and far to sing Feliz Navidad to them over the phone.
Then we all enjoyed the white chocolate raspberry cake.
The recipe to this cake is simple, just use 1 box of white cake mix and follow the instructions on the box but substitute the water for milk. Then once the batter is ready, add a cup of white chocolate chips and stir. After that, pour batter into a pan and drop in frozen raspberries then bake at the appropriate temperature according the pan you use.
I used a 9 inch springform and baked it at 325 degrees for about 46 min. You definitely must check for doneness and voila a beautiful delicious cake for anytime of the year. I sprinkled powdered sugar on it and added two poinsettias too, to give it that beautiful Holiday cheer.
Overall, we had a blast and were very blessed and grateful to spend it together.
