My loving husband recently got me the 5.8 qt Cosori air fryer as a Mother's Day gift and I'm enjoying it very much. So far I have done air fryer pancakes, bundt eggs, stuffed mushrooms, tostones, cupcakes, pizza, chicken and so much more. I'm not a novice to air fryer cooking. I was an avid Power Xl user until it got damaged but the Cosori is great and its sleek design fits nicely on my countertop.
Now for these mini chocolate cakes, you see on the screen, don't they look delicious? Well, they certainly were and were done by just using 2 ingredients in the air fryer in only 9 minutes. I couldn't believe it
either.
I have made this cake before and posted it on the blog which was a recipe I found from The One Pot Chef
but that one I did in a regular oven and it took longer.
Today's mini cakes in the Wilton Silicone Tart Molds I posted about in my previous post, were done in a smaller batch.
I was able to get 2 mini cakes and half of one so if you are going to use more molds then you would need to prepare more cake batter. I just wanted a quick chocolate fix and boy did I get it. I gave the other cakes to my hubby and daughter and they loved them.
I like that If I wanted to, I could fit 4 molds with batter in this Cosori air fryer. The great thing about air frying is you can bake in ramekins or silicone molds making it perfect for this flourless chocolate cake.
Quick Recipe:
2 eggs separated from their yolks
1/4 cup plus another 1/4 cup of semi-sweet chocolate chips
Instructions:
Separate 2 room temp eggs from their yolks.
Melt chocolate chips in the microwave for 15-20 second intervals and mix by hand with a spoon until melted and smooth.
Take the egg whites and mix with a stand mixer or hand mixer until soft peaks form.
Take the egg yolks and mix them into the chocolate then fold in the egg whites slowly until a smooth batter is formed.
Then pour into sprayed molds being mindful not to overfill them. (I sprayed my molds with avocado oil and it was no problem with the taste either. yay!)
Place the cakes carefully in the air fryer basket and set temp to 330 degrees for 9 minutes.
Place a toothpick in the cakes to make sure they come out clean because when that happens, They are ready.
As soon as they were done, I popped it out and turned it over for a prettier presentation then I scooped on some chocolate chip banana Ice cream I had previously made and my chocolate craving was satisfied making this a perfect dessert for one. It was moist, fudgy and delicious. Oh, Yeah, and yummy to my tummy.
