Hey my lovely readers, have I got an easy yet wonderful and tasty meal you can do this Holiday season and take it into the new year with many more years to come. That’s right it’s a delicious inspired Caribbean appetizer that can be eaten as a meal by itself or accompanied with side dishes and it's called Tostones con Pollo (Fried Plantains with Chicken).
In todays blog post, I will share with you how to do it using shortcuts and it’s just as yummy done in an air fryer. So let’s get started!
The ingredients you will need are as follows:
Cooked and seasoned shredded or diced chicken breast
Green Pepper mix- Fresh or Frozen
Cooked Spinach
Shredded Cheese
1 bag of frozen plantains found in the freezer section (Walmart, ect
I decided to go the easy route with my ingredients so I used a frozen bag of sliced mixed peppers, a frozen bag of tostones, Sargento Mexican 4 blend shredded cheese, steamed spinach in the microwave and I used a food processor for the first time to chop the chicken.
Here are the steps:
1. Place the ingredients on a counter except the frozen tostones (plantains), keep those in the freezer until they are ready to be cooked.
2. Make sure the frozen pepper mix is defrosted and cooked according to your liking as well as the spinach and chicken.
3. Next select the type of shredded cheese blend you would like.
To air fry the tostones pre heat the air fryer to 400 degrees for 10 minutes.
Then use the air fryer baking basket and place 3-4 tostones in there for about 10-15 min.
Next, on a microwavable plate, place the air fried tostones on that plate and add your chicken, spinach, peppers and cheese. Then, place in the microwave for 30 seconds and wait until that cheese melts with gooey goodness.
As soon as you hear that beep, It's ready and you can eat it off that plate or put it on a serving platter to share with others (wink).
You can make as much or as little as you want. I personally eat 4 depending how big they are and you can jazz them up by adding onions and tomatoes, a little bit of garlic butter on them too. It's all up to you so let those creative sparks fly, have fun dressing up your tostones. These are great as appetizers for your gatherings too.
You can serve them alone or with a side of rice and beans.

This meal can be done by doing the from scratch method but sometimes schedules can get the best of us so thankfully there’s the next best thing. If you don’t have time to peel and double fry the green bananas to make them into tostones, Frozen is always an option. Please don’t hate. LOL
Oh, Yes before I finish this post, I wanted to mention the processor I used. I never had one or used one before until my mom gifted me one this week as an early Christmas gift. I decided I needed one after my hand started hurting by using my manual chopper. I would have to turn my whole arm to get my veggies and chicken diced or chopped. Of course, I could use the conventional way with a knife and fork to do this but nah. LOL. No more tears for me from those eye stinging onions.
This little compact contraption by Kitchen Aid is so easy to use. Its versatile and easy to clean, guacamole is next on my menu, some cookie dough and much more.
